Flaky mooncakes, a.k.a. Taiwanese mooncakes, are a modern twist to the traditional Mooncakes. They are made with a flaky dough, similar to puff pastry, and are usually wrapped around red bean paste with salted egg yolk.

Many thanks to Brenda and her team for giving me a wonderfully fulfilling baking session today!
